From our spat captured naturally in the Faou River - Rade de Brest -, the Pen Al Lann Oysters are then raised on the ground in Carantec in the Bay of Morlaix.

Pen Al Lann Oysters - Varieties and characteristics
The Tarzellou
This oyster owes its name to our Tarzellou park, in deep water on sand , a privileged place in the Bay, at the junction of the two main currents that feed it, off the tip of Pen Al Lann . Closely associated with red algae such as Dulse, Cryptopleura or Porphyra which cling to its shell, the "Tarzellou" benefits from a significant supply of food .
It develops a higher rate of flesh, providing a great length in the mouth, sweet and buttery . The taste is inimitable.
"Tarzellou" oysters are available from November to early May. Meat content of 12 to 13%.
La Roc'h Glaz
This oyster is raised on our Roc'h Glaz park : blue rock in Breton. This name corresponds to the schist point which flows into the sea at this point in the Bay. It retains its typical character of the ground oyster .
More sheltered in the western cove of Morlaix Bay , on the sandy bottom of the foreshore, it develops a finer and more iodized flesh .
"Roch Glaz" oysters are available from November to early May. Meat content of 10 to 12%.
The Barnenez
Raised in deep waters , on our park off the coast of Pointe de Barnenez and Sterec Island . This park, exposed to the remains of swell from northwest storms, is rather reserved for larger oysters.
The “Barnenez” subjected to these movements on a sandy bottom, develops a solid shell and firm flesh that lasts in the mouth .
"Barnenez" oysters are available from November to early May. Meat content of 10 to 12%.
The flat oyster “Belon”
Farmed in deep waters , 100% guaranteed in Carantec , the flat oyster "Belon" is the native species of the European coasts, different from the cupped oyster. Farmed for 3 to 4 years on our land parks , this oyster will develop a shape and taste typical of this part of northern Finistère .
A shellfish with firmer flesh , less salty and finer in the mouth . A real journey through time for enthusiasts. To be discovered by those who do not know it. The original taste of the Bay of Morlaix .
"Belon" flat oysters are available from November to early May . Crisp flesh and finesse in the mouth
The Forgotten One
It is an oversized hollow oyster . Much older - up to 15 years for the largest - it will have grown quietly.
Each “Oubliée” oyster weighs between 300 and 1500g , or even 2kg for the largest. To be enjoyed raw with a fork and knife or to be cooked. This oyster will give you 150 to 400g of flesh .
It is therefore sold individually from November to the beginning of May. Flesh content of 10 to 12%.
Little Roc'h Glaz
This is the only one of our oysters raised in bags on our park of "Petit Roc'h Glaz". It is reserved for the summer season because it is a sterile oyster, therefore not milky in summer .
A triploid, fine and iodized oyster , the Petite Roch Glaz is available from May to September . Its ideal consumption period extends from mid-July to the end of mid-September, when it will be the most fleshy .
Flesh content of 10 to 12%.
